Your morning breakfast just got better with these cute mini bagel bombs!

I enjoyed recreating these Starbucks-style bagel bites and never thought they would turn out so delicious. Fresh homemade mini bagels with creme cheese filling are ready to go every morning. They are a perfect in-between choice for those days when you don’t have the time to make a hot breakfast, nor do you feel like eating something right out of the refrigerator – heat them and make it to-go!
The just-right-sized, savory, and wholesome breakfast bagel for those busy mornings!

Ingredients:

  • 5 cups of all-purpose flour
  • 3 tbsp of brown sugar
  • 1-1/2 tbsp of active yeast
  • 1 egg
  • 2-1/4 cup of warm water
  • Everything bagel seasoning (or seasoning of your choice)

Cream Cheese Filling:

  • 2 packs cream cheese (16 oz) (at room temperature)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dill
  • 1 cup chopped scallions (add less or more depending on your taste)

Method:

Dough Preparation

Preheat the oven to 375 degrees F ( 190 degrees C)

Lightly grease a standard sheet pan.

In a bowl, add all-purpose flour and keep it aside.

Heat water in a pot until it is warm to touch. Remove it from heat.

Add yeast and brown sugar to this warm water and keep it aside for 10 mins. Do not mix. Here, we are helping the yeast to activate.

After about 10 mins, add this yeast mixture to the flour.

Here, you are ready to knead the dough. You can do this by hand or with the stand mixer fitted with a dough hook attachment. If doing by hand like me, it will take around 20 mins to bring it to a soft dough-like consistency. If using the stand mixer, knead it for 3 mins or so. The dough can appear very stiff and will look somewhat dry. If it is sticky, use a little flour on your hands to mix it well.

Turn the dough out onto a lightly floured surface. With lightly floured hands, knead the dough for 4-5 minutes more.

Cover the dough with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise at room temperature for 60 minutes or until double in size.

In the mean time make the cream cheese filling.

Add room temperature cream cheese in a bowl

Mix the garlic and onion powder.

Add dill and finely chopped scallions. Once mixed well, you can keep this in the freezer until you are ready to use it (around 20 mins).

Making the Bagels with the Stuffing:

Line two large baking sheets with parchment paper or silicone baking mats.

Remove the cream cheese mixture from the freezer and make tiny balls and keep them aside.

Take the dough and punch it down to release any air bubbles. Divide the dough into 8 equal pieces. (Just eyeball it– doesn’t need to be perfect!)

Shape each piece into a tiny ball. Press your index finger through the center of each ball and stuff the cream cheese ball you made earlier into the dough. Use your fingers to close it and shape them into a round ball again.

Continue making the dough balls and incorporating the cream cheese mixture into each of them.

Once you are done shaping the stuffed bagels, let them rest for at least 30 mins covered with the kitchen towel.

Bagel Water bath: 

Fill a large, wide pot with 2 quarts of water. Whisk in the honey or 1/3 cup of brown sugar.

Bring water to a boil, then reduce heat to medium-high. Drop bagels in, 1-2 at a time, making sure they have enough room to float around. Cook the bagels for 1 minute on each side.

Using a pastry brush, brush the egg wash on top and around the sides of each bagel.

Sprinkle everything bagel seasoning on top of the egg washed bagels.

Place a few bagels onto each lined baking sheet. Leaving room for them to expand.

Bake for 20-25 minutes, rotating the pan halfway through. You want the bagels to be a dark golden brown.

Remove from the oven and allow bagels to cool on the baking sheets for 20 minutes, then transfer to a wire rack to cool completely.

Fresh homemade bagel bites turned out so delicious. Soft, chewy, and perfect bagel-like texture. The savory cream cheese filling and ‘everything bagel seasoning’ added that extra flavor to make them just like Starbucks.
