Indulge your everyday sweet cravings with these healthy cinnamon donuts!

I love these gluten-free donuts with my tea. I used monk fruit, a natural sweetener, to curtail the sugar and make them an extra-friendly, low-calorie snack. They are baked rather than fried, and the dash of almond flour gives it that extra bit of protein to blunt the guilt of eating more than a couple!

Ingredients:

1/4 cup vegetable oil or 1/2 cup unsalted butter

4 large eggs (room temperature)

1 cup Zen-Sweet Monk-fruit natural sweetener (You can use granulated sugar, if you prefer)

1/4 cup powdered brown sugar (optional)

1-1/2 tsp ground cinnamon

1 – 1/2 tsp salt

1-1/2 tsp baking powder

1-3/4 cups of gluten-free all purpose flour

2 tbsp of almond flour

2/3 cup room temperature buttermilk (optional) (I used this since my batter turned very dry)

1/2 teaspoon xantham gum

3 tablespoons of cinnamon-sugar to sprinkle the finished donuts

Method:

1. Preheat the oven to 350°F.

2. Lightly grease a standard donut pan.

3. Add butter or oil, mix it well until smooth. Then, add eggs to this wet mixture. Mix it well.

4. Then add gluten free all purpose flour, the almond flour, and the xanthan gum to the bowl and blend it all together into a smooth batter.

5. Slightly grease the donut pan wells with oil.

6. Fill the donut pan wells about 3/4 full (about 1/4 cup of batter in each well).

7. Bake the donuts for 15 to 17 minutes. Use a paring knife, a cake tester, or a toothpick to confirm that the donuts are ready. They should be light brown. Don’t over bake them.

8. Remove the donuts from the oven and let them cool in the pan for about 3 to 5 minutes. Then, once the sides of the donuts pull away easily, remove them from the pan and move them to a plate or a container.

9. Sprinkle the cinnamon-sugar over the donuts while still warm. Enjoy as-is or slightly warmed in a microwave.

Oh well, I called them donuts, but it looks like they molded themselves into large muffins! 😂

They turned out delicious, though – soft, springy, not too sweet, a perfect tea or coffee nosh.
