Cute and petite marble cakes with fresh fruit and nuts!

A bite-sized gluten-free marble cakes calls for some attention. Loaded with yummy goodness – fresh raspberries, ground pistachios, and chocolate. Teacakes are my favorite simply because they are small in size and can be a quick snack any time of the day. This recipe is similar to the one on my blog with pistachios, but adding fresh fruit and cocoa gave it a distinct visual flair.

Ingredients:

  • 1 – 3/4 sticks or 14 Tbsp butter (extra for greasing the pan)
  • 3/4 cup pistachio nuts (few to decorate)
  • 1- 2/3 cups confectioners’ or powdered sugar (You can use honey or maple syrup as well)
  • 3/4 cup + 2 1/4 tbsp ground almonds or almond flour
  • 2/3 cup Gluten-free all-purpose flour
  • 5 large egg whites
  • 2 tbsp cocoa powder
  • 1 cup raspberries or any soft berries of your choice

Method:

Preheat the oven to 375 degrees F ( 190 degrees C)

Lightly grease tea cake pan. You can use muffin pan as well.

Ground pistachio nuts in a food processor with the confectioners’ sugar until very fine. If using honey or maple syrup, make sure you ground pistachios first and then mix it with the syrup.

Add the pistachio mixture into a bowl with the ground almonds and flour and mix together well. Roughly chop the remaining pistachio nuts and set aside.

Lightly froth the egg whites.

Then, add melted butter, egg whites to the pistachio mixture and mix well.

Transfer this mixture into a small bowl (around 1 cup) and add cocoa powder to it. Mix it well. This will be our base layer.

Add pistachio-cocoa mixture one spoon (depending on the slot size of your muffin or tea cake pan) at a time into the tea cake pan.

Then add the pistachio mixture over it, again one spoon at a time in each slot. This becomes our second layer.

10. Add a few raspberries to each one, then scatter with the chopped or whole pistachios.

Bake for 40-45 minutes, or until a cake taster inserted in the center comes out clean.

Serve warm or at room temperature. Dust with a little confectioners’ sugar if you like.

I can’t get enough of raspberries and pistachios so yet another fantastic treat made my snow day delightful. Mine turned out light and chewy, just right! 👌😋
