Delicious and smooth pumpkin ice cream with crunchy sweet flavor of candied nuts!

Apropos to “Pumpkin spice and everything nice,” here is another yummy treat that will gladden your taste buds. This time it is a pumpkin ice cream, with spice added to give it that extra bit of flavor and a blend of sweetened nuts to provide a crunchier interlude to this enjoyable dessert.

Ingredients for Ice Cream:

  • 1-14-oz. (400g or around 1- 2/3 cups) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 2/3 cup (170g) 100% pumpkin puree (not pumpkin pie filling)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp powdered nutmeg
  • 1/4 tsp ground allspice (pumpkin pie spice works great too)
  • 2 cups (475ml) heavy cream

Ingredients for Caramelized Nuts:

  • 4 tbsp sugar
  • 4 tbsp chopped cashew nuts or any mixed nuts (pistachios, almonds, cashews)
  • 1 tbsp butter

Method:

Make the ice cream base:

In a large bowl, mix the pumpkin puree with the cinnamon, ginger, nutmeg, and allspice (pumpkin spice) – this helps prevent the spices from clumping together.

Add the sweetened condensed milk and vanilla to the bowl, and mix until the mixture becomes smooth – (1 minute).


Whip the heavy cream:

In a second large bowl, beat the heavy cream with an electric mixer or in a stand mixer on medium-high speed until stiff peaks form in the cream – (10 – 12 minutes).

Blending the ice cream:

  1. Transfer the whipped cream to the bowl with the sweetened condensed milk and pumpkin mixture.
  2. Gently fold the whipped cream into the pumpkin mixture. You are done when the mixture looks smooth, light orange, and with no more streaks of whipped cream. Be careful not to over mix to avoid losing the creamy texture.

Method:

To Make Candied Nuts:

In a pan, add the sugar and caramelize it on medium-low heat. Keep stirring.

Once the sugar melts, add the butter. Stir well until it caramelizes.

Add the mixed nuts. Stir well. Immediately remove from heat.

On cooling, transfer the nut mixture into a food processor or use a mortar pestle to make it into coarse pieces – they taste perfect in the ice cream.


Preparing the Ice Cream Box:

Add 2 tbsp (or according to your taste) of the candied nuts in the ice cream base and mix lightly.

Reserve 3 tablespoons of the nuts for garnishing.

Freeze the ice cream:

Pour the mixture into a loaf pan or any kind of freezer-safe container. Add the nut garnish.

Place a sheet of wax paper or saran plastic wrap on top of the mixture. The saran wrap or wax paper helps prevent ice crystals from forming.

Transfer to the freezer and freeze for at least 6 hours.
