Indulge your fall cravings with this healthy pumpkin donut!

Pumpkin is a fall favorite. These pumpkin-flavored donuts bring out the color of the season, are soft and moist. They are baked rather than fried, and the dash of almond flour gives it that extra bit of protein to blunt the guilt of eating more than a couple!

Ingredients:

  • 1/4 cup vegetable oil
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup powdered brown sugar
  • 1-1/2 cups pumpkin purée (canned pumpkin)
  • 1-1/2 teaspoons pumpkin pie spice, or 3/4 teaspoon cinnamon plus a heaping 1/4 teaspoon each of nutmeg and ginger
  • 1-1/2 teaspoons salt
  • 1-1/2 teaspoons baking powder
  • 1-3/4 cups of gluten-free all purpose flour
  • 2 tablespoons of almond flour
  • 1/2 teaspoon xantham gum
  • 3 tablespoons of cinnamon-sugar to sprinkle the finished donuts

Method:

  1. Preheat the oven to 350°F.
  2. Lightly grease a standard donut pan.
  3. Add the oil, eggs, sugar, pumpkin, spices, salt, and baking powder into a bowl and mix it until smooth.
  4. Then add the all purpose flour, the almond flour, and the xanthan gum to the bowl and blend it all together into a smooth batter.
  1. Slightly grease the donut pan wells with oil.
  2. Fill the donut pan wells about 3/4 full (about 1/4 cup of batter in each well).
  3. Bake the donuts for 15 to 17 minutes. Use a paring knife, a cake tester, or a toothpick to confirm that the donuts are ready. Keep it in the oven longer if needed.
  4. Remove the donuts from the oven and let them cool in the pan for about 3 to 5 minutes. Then, once the sides of the donuts pull away easily, remove them from the pan and move them to a plate or a container.
  5. Sprinkle the cinnamon-sugar over the donuts while still warm.
  6. Enjoy as-is or slightly warmed in a microwave.
