A fruit, date and nut delicacy to enjoy anytime of the year.
Fresh Raspberry Date-Nut Bites are easy to make, no-bake, nutritious, healthy and loaded with energy. Good amount of protein, fiber and filled with antioxidants in every bite! A quick snack that is tasty, naturally sweet and wholesome to start your day, in-between meals, a workout essential – that adults and kids will love equally. Enjoy 🙂

Ingredients:
- 1-1/2 cups fresh or frozen raspberries
- 1 cup raw cashews
- 1 cup dried dates
- 1 tsp chia seeds
- 1-1/2 cups unsweetened desiccated coconut
- 1/2 cup almond flour
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp honey (optional)
Method:
- Add unsweetened desiccated coconut, cashews, almond flour, and dates in the food processor and blend well.
- Add vanilla extract, a pinch of salt, chia seeds, fresh raspberries, and honey (optional) to the mix.
- Pulse the mixture until it has combined well and sticks together.
- Transfer the mixture into a bowl to knead with your fingers. (Mine turned out a bit sticky, so I allowed the mixture to firm up a bit in the refrigerator for about 10 minutes before rolling into bites.)
- Use your hands to shape the mixture into small-sized bites.
- Leave it as is or roll it over some desiccated coconut or powdered almonds with sugar.
- Place them in the fridge for 30 – 40 minutes to set.
- Once firm, enjoy these nutritious Fresh Raspberry Date-Nut Bites any time of the day!
